Executive Chef Ryan McQuillan comes to Plough & The Exchange as a rising star known in the East Coast culinary scene. Known for his vibrant personality and buzz-worthy dishes, McQuillan has mastered the art of designing inspired, seasonal menus utilizing fresh, local ingredients which drives Plough & The Exchange’s approachable modern American menu.

Beginning his career at The Restaurant School at Walnut Hill where he graduated in 2009, the Pennsylvania native went on to work at renowned restaurants like Le Bec-Fin under chef George Perrier and 10 Arts Bistro, then gained more notoriety during time at Mercato BYOB, winner of Philadelphia Magazine’s ‘Best of Philly’. While serving in his previous role as head chef, Kennett Square’s Talula’s Table was named “the toughest reservation in the US” by Conde Nast Traveler. Chef also received a 3-star rating from Philadelphia Magazine during his time at Porch & Proper, and four bells from the Philadelphia Inquirer while at Talula’s Table.

As Executive Chef of Plough and rooftop bar and lounge The Exchange, McQuillan showcases his talents through seasonally focused dishes that pay homage Lancaster’s rich cultural roots.


The Mixologist!

Spearheading the creation of exceptional cocktails and the beverage programs at The Exchange and Plough is beverage director and master mixologist Frank Fontaine. A Western Pennsylvania native, Fontaine’s dynamic personality is brought to life with his imaginative cocktails and creative twists on the classics. His beverage programs never disappoint as they offer something for everyone, spotlighting local and unexpected ingredients, catchy names with plays on pop-culture, and fun displays with smoked ice, adventurous garnishes and creative glasses.

Fontaine began his bartending career and was trained by renowned bartender Kenny Luciano while studying theater at Indiana University of Pennsylvania. Moving to Lancaster in 2006, his excellent work landed him roles at local hotspots including John J Jeffries (2014 – 2019), Aussie & The Fox (2013 - 2014) and Annie Baileys (2005 – 2013) where he led the beverage programs. A nationally renowned competitive bartender, Fontaine’s background and love for the stage introduced him to the world of competitive bartending where he has been honored as GQ Magazine’s Most Imaginative Bartender (2012 & 2013), Woodford Reserve Master of the Manhattan (2014), Herradura Master of the Margarita (2013), and also has been ranked as one of the top 20 bartenders in North America at the Nightclub and Bar Show (2013).
